The Joy of Going Nuts: Pine Nuts and Other Great Nuts

The Joy of Going Nuts

One of the joys of weekly food shopping over the last year for me has become my visit to the bulk bins at Whole Foods.

In the past, I used to buy a package of nuts -for me, most often, this would be walnuts that I used to use more of and so could justify buying a whole package at a time- but now that I have discovered the bulk bins at Whole Foods, I am free to experiment!

Nuts are healthful, nutritious, great add-ins, and a handy way to go vegetarian for a meal or a day without hunger, weakness, or deprivation.  That's all helpful. But, let's face it: they are also Yumm!

Anyway, at Whole Foods, I can now buy a sample of this or a handful or a week's worth of a bunch of different nuts and dried fruits, etc. so I've grown my nut-palate and become more familiar with what used to be exotic rare excursions into eating and using nuts.

Here is one of my favs:


The Pine Nut

It's not really a nut. It's a seed in a pine cone! Who would have thought those squirrels and even my dogs -the famous sheepdogs: Darla and Fisher- would be so smart. In the past, I've had them primarily in pesto dishes. But now, they color my salads, soups, vegetable dishes, my eggplant, chicken, and fish, and I even eat them raw all by themselves. They are lovely and delicate and guess what else, they are amazing nutrition-wise.

They are 58 calories in a TBSP but curb your appetite so they help with weight loss, they aid cardiovascular support, are high in iron, anti-oxidants -i.e. anti-aging, contain lutein, an antioxidant that is crucial to the prevention of eye diseases such as macular degeneration and cataracts and vitamin A in the form of beta carotene, another important eye vitamin, and containing protein and magnesium, they aid in energy boosting. That's a LOT of umphhhffff  for something with such a good Yumm factor.

Brazil Nuts

Cashews

Okay, Just Yumm.  We know these are good for us. We eat them in Chinese and Thai chicken, for goodness sakes. They are best eaten you know, umm, naturally, and are still full of flavor. But here is a perfectly important point: At Whole Foods, you can buy the Thai salted, roasted cashews and they won't make it home, they are soooo delicious. But you can buy a handful and be gloriously done with it and leave the rest in the bin behind you. Ahh yes, a moment of zen.

Dried Michigan Cherries

Here is my plug for the best of the best cherries from my own home state of Michigan. I dare you to compare!


*A word of caution and forewarning though: like all things, take your nuts in moderation. Don't overdo it. Some are fattier than others and for some people, they may be hard to digest in large amounts too, so use your good common sense!

And, with this, I ask you to journey to your own Whole Foods or other natural food bulk food bin aisle and do what you must: taste and experiment and let your senses have at it!

The Devil Made Me Do It!

Yesterday, I was Evil!!

But what with the internet and google, information is everything when a girl's gotta do what a girl's gotta do.

Let me walk you through my food yesterday:

Coffee: 1 cup Orange juice and coffee with whole milk (1 cup), (the right way!) 
calories = 260

Brunch: 1 lovely Sort of Greek-Inspired Omelet:
calories =  340

5 PM (I was hungry!): 1 cup of Imagine Creamy Butternut Squash Soup (90 calories) with 1/8 cup slivered almonds (100 calories) and two cut up mushrooms (10 calories): calories for snack/could be dinner = 200 calories.

And then...

Well, about two hours later, I found this partial bag of hidden contraband: 2/3 of a bag of hot blue corn chips (the not allowed in the house, they're so good variety) and I went wild.

I mashed up 1 large avacodo with 2/3 of a jar of El Pinto All Natural Hot Salsa that I also just had to try! And between my husband and myself, we finished off the whole thing. And, boy-oh-girlfriend, it was delicious, finger-licking yumm!

And then I went to see just how bad a bad girl had been.

The chips were 140 calories a serving with 9 servings in a full bag so, 2/3 of a bag or 6 "servings " (yeah) = 840 calories.  The avacodo was medium, but I'll calculate it as a big one just to be safe at 322 calories and the salsa (which was gloriously hot-hot-hot, just like the top of the jar promised it would be) was...  (Wait a minute. This can't be right. No it is!)  ...5 calories per serving (2 TBSP) with 15 servings in a jar and 2/3 of a jar was only 50 calories.

Um, (drum-roll), the grand total for this decadence was 1212 calories, split in half with my evil husband and I still came out to a protein rich yumm-loaded totally satisfying dinner calories count here of 606 calories!!!

I LOVE INFORMATION!!!

I mean, OMGosh, my Total food calories intake for the day was still only 1406 calories!!!

For a BAD girl, that information is Heaven!

Once Upon A Time in Mexico


Okay, here is a true story.

Once upon a time, (a long time ago), I was in college in Southern California and it was spring vacation. I didn't have a lot of money. So I got on a (very long) bus and went down, down, down into Mexico.

I got a cheap hotel. I walked to the beach every day and walked on the beach every day. I got sunburned. And, at the time, I didn't like or trust the food south of the border. So every day, I ate shrimp cocktail for lunch, snacks, and dinner.

Hmmm. Delicious! Yes!

When I got back, I had lost a LOT of weight and I was already thin and in shape.

Shrimp cocktail (and nice beach walking) can do wonders for a girl!

P.S. When I allocate one night (like Friday or movie night or dancing night out night) a week to a dinner of just a LOT of shrimp cocktail, (I often buy a pound and share it with my husband! Yep! That's a half-pound a piece!) my waistline gets trimmer naturally!

Delicious, low in calories, high in yumm and feeling fed factor,
and back on track!
